These are salt pans located at Marsascala in Malta. The idea is that the sea water washes over the pools in rough weather and then it evaporates in the sun, leaving behind salt which is collected. The pools were carved out by hand and are probably quite old.

What is the scale of this? It's a curious photo, I've no idea whether each of those pools are the size of a fist or the size of a rice field.

The pans vary but would typically be around 3-4 feet in width. So quite a bit larger than your fist but not very large by any means :-)
